Fiesta flour is a finely ground flour from yellow field pea. Fiesta flour contains 67% starch and a of minimum of 22% protein (N x 6.25, dry weight basis). Fiesta Flour is used effectively in a wide variety of applications such as in extruded snacks, as a water binding agent in batters and breadings (either in the breading or dip mix), as a water control agent in baked goods and sauces, etc.
